Thai Salad with Cockles

Serves 2

INGREDIENTS

For the Dressing:

  • 1 tbsp Groundnut Oil
  • 1 tsp Toasted Sesame Oil
  • ½ tsp Soft Brown Sugar
  • 1 tsp Fish Sauce
  • Rind and Juice of 1 Lime

 

  •  ¼ Cucumber, deseeded and cut into matchsticks
  • 2 Carrots, peeled and cut into matchsticks
  • 150g Beansprouts
  • 1 x 200g Jar Ocean Crown Cooked & Pickled Cockles, drained
  • 2 Spring Onions, finely sliced
  • 1 Red Chilli, deseeded and finely sliced
  • 3 tbsp Chopped Coriander
  • 3 tbsp Chopped Mint

METHOD

Mix the dressing ingredients together and set aside.

Place all the salad ingredients into a bowl and pour the dressing over. Toss together well and serve.
